adventures in 24 hour pickles.

if you read this blog occasionally, you know i like to garden. for some reason this year, my cucumber plant feels like it’s on steroids. so in one day, i picked this many cucumbers.

that’s a lot for my little garden. after getting tons of answers on what to do with them via twitter, i finally decided to start making refrigerator pickles.

i used this recipe from meet the shannons. i’ve been sort of obsessed with this blog – they remake everything in the Betty Crocker cookbook VEGAN – but haven’t made a thing from it yet. i thought this would be a great opportunity.

after 24 hours in the fridge, here’s the result…or the bottom of the jar of the result…because the jar is some old Trader Joe’s salsa jar and it’s not so cute.

here’s what they actually look like.

they’re somewhere between bread and butter pickles and dill pickles and they’re fantastic. so much so, my neighbor keeps sneaking into my fridge and eating them. i’m not kidding.

easy to make and you don’t have to wait 6 weeks like you do with regular pickles (yes, i’ve made those too). you do have to eat them in 2 weeks though but that hasn’t been a problem since i pretty much polish off a jar in a day.

    Have you met my wife Rachel yet? I can’t remember if she was at any of the shows where I talked to you and Zane. Anyway, this is right up her alley. You guys would get on like a house on fire, all talkin’ about gardening and makin’ pickles and stuff. I would play the very important role of eatin’ said stuff.
